Goan Banana Fritters (Filos) - This delicious fritter I’ve enjoyed eating ever since I was a child. I remember waking up in the morning to the sweet aroma of Filos. My mother used to prepare these thick dense banana pancakes for breakfast. Made with over ripe bananas, these are definitely hard to resist. The sweetness of the bananas and palm jaggery gave these pancakes a unique taste. They are a sure delight to your palate.
Prep time - 15 mins
Cook time - 5 mins
Total time - 20 mins
Serves - 8
Ingredients
2 overripe bananas
2 eggs
2 tablespoon sugar/jaggery
4 tablespoon flour
1/4 teaspoon vanilla essence
1/4 cup milk
1 pinch salt
Oil/clarified butter to grease the pan
Instructions
Mash the bananas in a bowl until no lumps remain. Add the egg and mix with a wooden spoon.
Add the sugar, a pinch of salt, milk, flour and vanilla essence. Mix till it forms a pancake like batter. You can adjust the consistency by adding the milk and flour accordingly.
Heat a pan and add a teaspoon of oil/clarified butter. Pour a ladle full of batter. Once the bottom side is cooked, flip and cook the top too.
Serve hot with a cup of tea.
Note
You can use wheat flour instead of refined flour.
To flavor the fritters you can use cardamom, nutmeg or cinnamon powder instead of vanilla essence.
