This easy meatloaf recipe is loaded with flavor and is pretty simple to make! Minced mutton is seasoned, mixed with breadcrumbs and baked to perfection. It’s all topped off with a zesty topping. The meatloaf is so tender and juicy on the inside and the sweet and tangy glaze adds so much flavor. Serve this easy meatloaf with mashed potatoes.

Servings - 8 servings
Meatloaf Ingredients
2 lbs mutton mince (or beef )
2 med onion finely chopped
2 large eggs
3 garlic cloves minced
3 tbsp fresh parsley finely chopped
3/4 cup breadcrumbs
2 tbsp yogurt
1/4 tsp oregano
1 ½ tsp salt or to taste
1 tsp ground black pepper
3 boiled eggs
Meatloaf Sauce Ingredients
1/4 cup ketchup
2 tbsp brown sugar
¼ tsp ground black pepper
¼ tsp salt
Instructions
1. Line a 9”x 5” loaf pan with butter and preheat oven to 375°F.
2. Saute the onion, garlic, mince, salt and pepper in a pan for about 10 mins.
3. In a large bowl, add all of the remaining ingredients along with the saute'd meat to prepare the loaf. Mix well to combine.
4. Add the meat to the loaf pan, place the boiled eggs and cover them with the remaining meat. Gently press the meat down and shape it evenly and bake at 375˚F for 40 minutes.

5. In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return it to the oven and bake additionally for 15-20 minutes. Rest the meatloaf 10 minutes before slicing.
Notes
Be sure to mix the meat really well. This is a very moist meatloaf recipe so under mixing can cause the meatloaf to be too soft/mushy.
In case your meatloaf is falling apart then you may not have used enough binding ingredients. This recipe calls for plenty of breadcrumbs. It may be over baked. Fifty five minutes is all it takes. Or, you sliced into it while it was still too hot. I always let my meatloaf cool for 10 minutes before slicing into it.
