Sometimes you just got to say cluck it and then bake it!

Baked Chicken is one of my favorite meals! With a quick marinade and an even quicker bake time, you can have a meal on the table in no time at all!


In the cooler months, BBQ and grilled Chicken is always on the table but come warm weather, we switch over to cooking most food in the oven. Baked chicken over steady heat helps to seal the juices in, keeping your chicken nice and moist. The higher heat gives a nice sear adding the char that we all love so much!


A marinade is the perfect way to add flavor to baked chicken (and it can help tenderize). I try to allow for 30 minutes or more if possible! The marinade in this recipe caramelizes on the outside of the chicken when baked, creating a beautiful flavor and an incredibly juicy tender chicken.


Preparation Time - 5 minutes

Marination Time - 30 minutes

Cook Time - 20 minutes

Total Time - approx 1 hour

Servings - 4


Ingredients


· 1/3 Cup Oil Olive Oil Or Vegetable Oil

· 1/4 Cup Yogurt

· 3 Tablespoon Cashew nut Paste

· 2 Tablespoons Ginger Garlic Paste

· 2 Tablespoons Corn Flour

· 2 Tablespoons Lemon Juice

· 1 Tablespoon Salt

· 2 Tablespoons All Spice Powder

· ½ Tablespoon Fenugreek Leaves

· 1 Teaspoon Cumin Powder

· 1 Teaspoon Crushed Green Chilies

· ¼ Teaspoon Cardamom Powder

· 1 Teaspoon Red Chili Powder

· 1 Full Chicken

Instructions


1. In a small bowl mix all ingredients. Mix until combined.

2. Rub mixture over both sides of the chicken.

3. Marinade for a good 30 minutes (or up to 4 hours) before cooking the chicken.

4. Preheat the oven to approximately 375-400°F.

5. Place chicken in the oven and bake for 20 minutes or until cooked.

6. Let rest for 5 minutes to let juices reallocate and slice to serve.
