Blue Chia Coconut Pudding - Blue food can be so healthy! Only chia seeds, coconut milk and blue spirulina are required to create this beautiful baby-blue chia pudding. This colorful and creamy blue spirulina chia pudding is not only healthy but also very delicious, and it makes the perfect idea for breakfast, snack or dessert.

Chia seeds are remarkable little seeds that you can eat as a part of your wholesome and healthy lifestyle. There’s so much that you can do with them but my favourite thing is definitely healthy chia pudding!


Prep time - 5 mins

Serves - 2


Ingredients


Pudding

  • 1 cup water

  • 1/2 cup coconut cream from full fat coconut milk

  • 1/2 cup chia seeds

  • 1/2 tsp blue spirulina

  • Few drops of vanilla extract

  • OPTIONAL: 1-2 tbsp sweetener of choice

Toppings

  • Fresh fruit

  • Granola

Instructions

  1. Whisk all ingredients together to combine.

  2. Pour the pudding mixture into glasses and leave in the fridge overnight or at least for an hour.

  3. Place the granola as a base in the serving mugs. Top with some fruit or any topping of your choice and enjoy.
